Perfect for tea, organically grown on our farm in Launiupoko 
 
use 1-2 T dried flowers in 1Q water. bring to a boil and boil for 5 minutes or so until flowers have lost color and water is very blue.  I love to add 1 stalk of lemongrass chopped to this. 
Strain out flowers. Can drink immediately or refrigerate. 
And magically changes color from deep ocean blue to magenta with citrus or any acid!. 
Can also blend the flowers into sauces/desserts/nut milks for coloring
